To make a healthy, delicious and filling soup, try this recipe for pumpkin, coconut and ginger soup.
3 cups roasted pumpkin
2 cups chicken stock
1/2 cup coconut milk (light)
1 tablespoon ginger, minced
Place all the ingredients together in a pot along with enough water, bring to the boil and simmer for around 20 mins or until the pumpkin pieces have broken down, then let it cool.
Whiz is with a stick blender and serve with fresh greek yoghurt and your favorite herb (try parsley or cayenne pepper). This recipe will freeze and can be reheated whenever you need a quick meal!
The best thing about soup is that its usually cheaper to make your own than it is to buy it prepared at the supermarket. Make sure you’re not adding any creams or extra fat and this is a great meal to help you lose weight.
