To make a healthy, delicious and filling soup, try this recipe for pumpkin, coconut and ginger soup.
3 cups roasted pumpkin
2 cups chicken stock
1/2 cup coconut milk (light)
1 tablespoon ginger, minced
Place all the ingredients together in a pot along with enough water, bring to the boil and simmer for around 20 mins or until the pumpkin pieces have broken down, then let it cool. (more…)
